Sicilian Saute Recipe

Savory vaegtables and fish sauted in butter and a blend of italian seasonings makes for a perfect summertime dish

ingredients

  • 2 Tbsp. olive oil
  • 1 zucchini, sliced
  • 1 yellow summer squash, sliced
  • 1 cup cherry tomatoes, halved
  • 2 lbs. white fish fillets (tilapia, orange roughy, etc.)
  • Prepared hot linguine pasta
  • Shredded Parmesan cheese

Heat olive oil over medium-high heat in a large skillet; add Mama Mia Marinara Sauce Mix, zucchini and summer squash. Saute for 2-3 minutes or until vegetables are crisp-tender; stir in tomatoes. Heat through; remove vegetables, keeping all the liquid in the pan. Cook fish in hot skillet, turning once until fish flakes easily, about 5 minutes. Add vegetables back into the skillet; heat through. Serve fish and vegetables with hot pasta; garnish with Parmesan cheese. Makes 6 servings.

Rated 3 out of 5 by from Good The flavors were good. I don't think I will make the fish in the skillet again. It was kind of a mess and I could only get 3 fillets in the skillet at a time. I much prefer to bake in a hot oven. I also seasoned the fish a bit as I thought it needed it.
