Slow Cooker Pork Posole Recipe

This slow cooker version of Mexican pork posole soup is so flavorful and simple, it's sure to become a family favorite.

ingredients

  • 4 cups unsalted chicken broth or stock
  • 1½ pounds pork sirloin roast, cubed
  • 1 cup chopped onion
  • 1 poblano chile pepper, chopped
  • 2 (15 ounce) cans white or yellow hominy, rinsed and drained
  • 1 (4 ounce) can diced mild green chiles
  • Chopped avocados, chopped cilantro, sour cream, optional

  1. In a 4-quart or larger slow cooker, combine first 3 ingredients. Stir in next 5 ingredients.
  2. Cook on LOW 6-8 hours or until pork is fork tender.
  3. Serve garnished with avocado, cilantro and sour cream, if desired.

Makes 6 servings.

Make Ahead & Freeze: Combine all ingredients except chicken broth and garnishes in a gallon freezer bag. Seal well, label and freeze. Thaw completely. Transfer to slow cooker and add chicken broth. Continue with step 2.
