Combine first 4 ingredients in large sauce pan; saute until tender. Add soup mix and hot water; whisk until smooth. Cook according to package directions. Add chicken or turkey about a half hour before serving. Makes 6-8 servings.

Love this recipe!The first time I made this was with leftover Thanksgiving Turkey. Just adding these few extra ingredients takes this soup to a whole new level. Really really good!
