Southwest Beef Stew Recipe

  • 1½ pounds cubed beef stew meat
  • 1 pound petite red potatoes, quartered
  • 1 pound baby carrots, cut in half
  • 1 medium onion, chopped
  • 1 (14.5 ounce) can diced tomatoes, drained
  • 1 (14.5 ounce) can beef broth
  • 1 (12 ounce) jar homestyle beef gravy
  • 1 packet Southwest Slow Cooker Sauce Mix


  1. In 3-quart or larger slow cooker, combine all ingredients.
  2. Cook on LOW 6-8 hours or HIGH 4-6 hours.

Makes 6 servings.

Tip: For a thicker stew, whisk together 2 tablespoons cold water and 2 tablespoons cornstarch. Stir into stew. Cook 10-15 minutes longer.

If the heat is too much cut seasoning in half using only half the seasoning packet or double up on everything else.
