  1. Preheat oven to 375°F. In a greased 13x9-inch baking dish, combine all ingredients; salt and pepper as desired. Stir.
  2. Bake, covered, 30 minutes. Stir. Continue baking, covered, 20 minutes; stir. Continue baking, uncovered, 10 minutes or until liquid is absorbed.
  3. Let stand 10 minutes before serving.

Makes 6 servings OR 4 servings + 2 leftover servings.

Rated 4 out of 5 by from easy tasty dinner I'm making this dish for the 3rd time tonight...so clearly my husband and I like it. It's an easy freezer meal and can easily be made vegetarian/vegan. We feel that the dish could use a little extra flavor (admittedly, I make it without the garlic garlic), so we season it with extra Wahoo Chili or Chipotle Seasoning after it's cooked.
