  • 2 cups leftover Southwest Chicken Quinoa Bake (see link to recipe in directions)
  • 4 (6-inch) flour or corn tortillas, warmed
  • 1 ripe avocado, pitted, peeled and diced
  • ¼ cup salsa
  • Optional toppings: crumbled Mexican Cotija cheese, sour cream

Prepped with 2 cups leftovers from Southwest Chicken Quinoa Tacos recipe.

  1. Place Southwest Chicken Quinoa Bake in a microwave-safe bowl. Microwave on HIGH 2-3 minutes or until heated through.
  2. Divide among warmed tortillas. Top with diced avocado, salsa, cheese and sour cream.

Makes 2 servings.
