  • 2 bags baby spinach leaves, de-stem as necessary
  • 2 (11 oz.) cans Mandarin oranges, drained
  • 4 green onions, chopped
  • 1/2 cup almond slices, toasted
  • 1/4 cup celery, chopped

Combine the first 5 ingredients in a large bowl, toss gently; cover and chill thoroughly. Serve with Vidalia Onion Dressing on the side, or toss with the dressing just before serving. Makes 6-8 servings.
