ingredients

  • 6 tsp. Chipotle Seasoning
  • 6 Tbsp. brown sugar
  • 2/3 cup white vinegar
  • ½ cup olive oil
  • 2 medium cucumbers, chopped
  • 4 Roma tomatoes, chopped
  • 1 avocado, peeled and chopped
  • 5-6 scallions, chopped
  • 1 (9-10 oz.) pkg. frozen corn, thawed
  • 2 (2.25 oz.) cans black olives, sliced

In a small bowl, whisk Chipotle Seasoning, sugar, vinegar and olive oil. In a large bowl, mix together the remaining ingredients. Pour olive oil mixture over; gently toss to coat. Refrigerate until ready to serve. Makes 18-20 servings.
