Rub roast with 1 Tbsp. Ultimate Steak™ Seasoning. Place in a 4-quart or larger slow cooker with peppers, onions and mushrooms. Cover with beef broth and remaining 1 Tbsp. Ultimate Steak™ Seasoning.
Cook on low 8-10 hours. Remove meat from slow cooker and pull apart with forks. Place back in slow cooker.
Place cheese slices on toasted hoagie buns. Add beef and vegetables to buns. Serve with small cups of cooking juices for dipping sandwiches in, if desired.
