  1. In medium saucepan, heat oil over medium-high heat. Add veggies, sauté 2-3 minutes.
  2. Stir in remaining ingredients. Bring to a boil; reduce heat and simmer 10-15 minutes.

Makes 1 serving.

Make Ahead: Prepare step 1. Cool and place in a microwave-safe storage container. Add remaining ingredients. Refrigerate up to 1 day. Microwave on HIGH 3 minutes, stirring halfway, or until heated through.
