Vidalia® Strawberry and Spinach Salad Recipe
Our Vidalia® Onion Dressing does double-duty as a marinade for grilled chicken – and of this simple spinach salad.
- 1 - 1½ lbs. boneless, skinless chicken breasts
- 10 oz. pkg. baby spinach
- 2 Tbsp. sliced almonds
- 8 strawberries, sliced
- 2-3 Tbsp. crumbled feta cheese
Marinate chicken breasts in a large resealable plastic bag with about ½ bottle Vidalia® Onion Dressing; refrigerate at least 30 minutes. Grill chicken over medium heat about 1-2 minutes per side; reduce heat and cover. Cook another 3 minutes per side or until no longer pink in the middle; set aside to rest. Layer remaining ingredients on a large platter or individual salad plates. Slice chicken into strips, and place on top. Gently warm dressing in microwave; drizzle over salad or serve it on the side. Makes 4 servings.
