Preheat oven to 350°F. In a medium bowl, combine first 3 ingredients; set aside.
In a medium microwave-safe bowl, whisk eggs, Onion Onion Seasoning and Garlic Garlic Seasoning until combined. Microwave on HIGH 45 seconds; stir. Continue microwaving and stirring in 30-second intervals until eggs are just barely set.
Spread each tortilla with about ¼ cup bean mixture. Top with 2 tablespoons egg, 2 tablespoons enchilada sauce and about 1 tablespoon cheese. Roll-up and place seam-side down in a greased 13x9-inch baking dish.
Pour remaining enchilada sauce over the top of the rolled tortillas and bake 25 minutes. Spread Monterey Jack Queso over enchiladas. Continue baking 2-3 minutes or until queso is warm. Garnish with tomatoes, avocado and cilantro, if desired. Serve immediately.

Best Enchiladas Ever!This is an amazing spin on enchiladas! Our whole family loves these! We have had this recipe a few times now and love making it when we have visitors and sharing it with them!
