Wahoo Breakfast Enchiladas Recipe

  1. Preheat oven to 350°F. In a medium bowl, combine first 3 ingredients; set aside.
  2. In a medium microwave-safe bowl, whisk eggs, Onion Onion Seasoning and Garlic Garlic Seasoning until combined. Microwave on HIGH 45 seconds; stir. Continue microwaving and stirring in 30-second intervals until eggs are just barely set.
  3. Spread each tortilla with about ¼ cup bean mixture. Top with 2 tablespoons egg, 2 tablespoons enchilada sauce and about 1 tablespoon cheese. Roll-up and place seam-side down in a greased 13x9-inch baking dish.
  4. Pour remaining enchilada sauce over the top of the rolled tortillas and bake 25 minutes. Spread Monterey Jack Queso over enchiladas. Continue baking 2-3 minutes or until queso is warm. Garnish with tomatoes, avocado and cilantro, if desired. Serve immediately.
