Wahoo! Brunch Eggs Recipe

ingredients

  • 10 eggs
  • 2 tsp. Wahoo Chili Seasoning
  • ½ cup flour
  • 1 tsp. baking powder
  • ½ cup (1 stick) melted butter
  • 2 (4 oz.) cans chopped green chiles
  • 2 cups cottage cheese
  • 16 oz. shredded Monterey Jack cheese

Beat eggs lightly in large bowl; whisk in next 7 ingredients. Pour mixture into greased 9 x 13 baking pan. Bake, uncovered, at 400° for 15 minutes and 350° for 35-40 minutes. Cut into squares while warm. Serve topped with Corn, Black Bean Salsa. Makes 8-10 servings.
