- In large bowl, combine first 3 ingredients and 1 tablespoon Dried Tomato & Garlic Pesto Mix. Form into 6 patties. In a gallon freezer bag, combine zucchini, 1 tablespoon Avocado Oil and Garlic Garlic Seasoning. Seal well; toss to coat.
- In medium microwave-safe bowl, combine remaining 1 tablespoon Dried Tomato & Garlic Pesto Mix with 3 tablespoons water. Microwave on HIGH 30 seconds. Let cool. Whisk in mayonnaise and milk of choice. Set aside.
- Prepare grill to medium heat. Place patties and zucchini slices on grill. Grill, turning once, until internal temperature of burgers reaches 165°F on an instant-read food thermometer, about 8-10 minutes and zucchini slices are browned and crisp-tender, about 5-6 minutes.
- Layer zucchini slices, turkey burgers, tomato slices, red onion and arugula. Drizzle with pesto dressing.
Makes 6 servings.
Serve with wedges of watermelon.
Make Ahead & Freeze: Prepare burger patties and place in a gallon freezer bag between sheets of wax paper. Seal well, label and freeze. Thaw completely and continue with step 1.
