Black Bean, Feta and Tomato Salad Recipe
This salad combines our Simply Salsa with black beans, avocado and feta for a simple yet delicious salad.
- 2 cups chopped tomatoes
- 16 oz. can black beans, rinsed and drained
- 1 peeled, diced avocado
- 1/4 cup crumbled feta cheese
- Fresh cilantro for garnish
- No bake/cook
Combine first 2 ingredients; chill 2 hours. Add black beans and avocado to Simply Salsa; mix gently. Serve garnished with feta cheese and cilantro. Makes 4-6 servings.

It's not one that can sit out for hours due to the avacado, but that's not a problem because it's gone quick. (Works well with tortilla 'scoops')
