My husband loves risotto, so I gave this a try.  I served it as a main dish with a side of asparagus and a salad.  I left out the mushrooms as my family doesn't like those. I also let each person add their own cheese on top because one of my kids has a dairy allergy.  He wouldn't have been able to eat this dish if I added the cheese as directed in the recipe.  While my pickiest eater wasn't sure about it at first, he ended up taking a second helping.  Everyone liked this one and I'll make it again.
