Preheat oven to 325°. Combine ingredients in a large bowl; blend well. Do not over mix; batter will be lumpy.
Spread batter into a greased 9 x 5 loaf pan. Bake 55-60 minutes or until a toothpick inserted in the center comes out clean.
Cool completely; remove from pan and slice. Makes about 11 servings.
Increase water by 2 Tbsp. and add 1/3 cup flour.

Stir in nuts or white chocolate chips.

Add 1/2 teaspoon mint, rum or almond extract to batter.
For cupcakes, spoon batter into greased muffin tins; bake at 325º for 25-30 minutes.
For mini loaves, reduce bake time by 10-15 minutes.
