Coconut Pineapple Bread Recipe

Combine first 4 ingredients; stir to blend. Spread batter in a greased 9 x 5 loaf pan; drizzle top with butter. Bake at 375° for 50-55 minutes or until toothpick inserted in center comes out clean. Cool completely. Makes about 14 servings.

Rated 4 out of 5 by from Pina Colada for breakfast! I loved this. Bread comes out moist because of the crushed pineapple, but not too much. The coconut adds good flavor. Be aware of what kind of coconut you use. Unsweetened and sweetened will change the flavor.
