Loaded Baked Potato and Chicken Casserole Recipe

  • 1 pound baby red potatoes, cubed
  • 1 (8 ounce) package cream cheese, softened
  • 1 cup shredded Cheddar Jack cheese, divided
  • ½ cup sour cream
  • 12 ounces bacon slices, cooked and crumbled, divided
  • 2 cups prepared diced Makin' Magic Chicken, thawed if frozen
  • Sliced green onions, optional

  1. Preheat oven to 350°F. Place cubed potatoes in a greased microwave-safe 8x8-inch baking dish. Cover with plastic wrap.
  2. Microwave on HIGH 5 minutes. Carefully uncover; stir. Recover and continue microwaving 3 minutes.
  3. Stir in cream cheese, ½ cup shredded cheese, sour cream and Makin" Magic Chicken Seasoning. Fold in half the bacon and Magic Chicken.
  4. Bake, uncovered, 30 minutes. Top with remaining ½ cup shredded cheese, remaining bacon and sliced green onions, if desired.
