Salsa Bean Salad Recipe

  • 2 tablespoons water
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can pinto beans, rinsed and drained
  • 1 (14.5 ounce) can fire roasted diced tomatoes, drained
  • 1 (11 ounce) can sweet kernel corn, drained
  • 1 green bell pepper, chopped
  • 1 bunch green onions, sliced (about ½ cup)
  • ½ cup crumbled Mexican Cotija cheese, optional

cooking methods

  • Microwave


  1. In large microwave-safe bowl, combine Simply Salsa™ Mix and water; microwave 30 seconds. Let cool.
  2. Add remaining ingredients to bowl. Toss to coat; salt and pepper to taste.
  3. Let stand 10 minutes before serving.

Makes about 6 (1 cup) servings.
