Shredded Beef Taco Salad Recipe

  • 1 cup leftover beef from Shredded Beef Tacos
  • 6 cups chopped Romaine lettuce
  • 1 cup pinto or black beans, rinsed and drained
  • ½ cup shredded Cheddar cheese
  • ¼ cup leftover Salsa Sour Cream
  • 1 medium tomato, chopped
  • 2 tablespoons chopped onion or green onions, optional
  • Tortilla chips, crushed, optional

cooking methods

  • Microwave


  1. Place shredded beef in a microwave-safe dish. Microwave on HIGH 1-2 minutes or until hot.
  2. In large bowl, combine all ingredients. Toss to coat.
  3. Divide between 2 dinner plates.

Makes 2 servings.

Work lunch suggestion: Divide lettuce between 2 large storage bowls. Top with beef, beans, cheese and onions. Place salsa sour cream in 2 small containers and tortilla chips in 2 small bags. Refrigerate all containers up to 1 day. When ready to eat, add everything to bowl, close and shake to combine.
