Tequila Lime Mahi Mahi

Brr. 

That pretty much sums up life in the upper Midwest right now. 

Now don’t get me wrong – our hometown has more than its share of beauty and friendly charms. But during the cold depths of January, I envy all of you who live in warmer climates. Especially since my car has refused to start for the past three days. 

So whether you already live by the ocean or you’re digging out your warmest socks and boots this week, here’s a tropical-inspired recipe just for you. 

Today we’re serving up mahi mahi – a gloriously thick, hearty fish that stands up beautifully to grilling. Our Roasted Garlic Infused Oil gives it subtle yet amazing flavor, and when you add a little fresh lime juice and tequila? Well, you’ve got one delicious dinner that will remind you of summertime – no matter how far you live from the beach.

Tequila-Lime Mahi Mahi

Ingredients

Directions

Place mahi mahi fillets in a large resealable plastic bag; add remaining ingredients and juice from 2 fresh limes. Marinate 30 minutes. Remove fillets from bag, discarding marinade. Grill over medium heat until fish flakes easily with fork, about 4 minutes per side. Top fillets with a squeeze of juice from remaining lime just before serving. Makes 4 servings.

Tips and Hints

  • No mahi mahi available? Substitute any firm, white fish, such as swordfish or grouper.
  • When grilling fish, always be sure your grate or grill pan is well-oiled to prevent sticking.
  • For a light yet flavorful dinner, serve your mahi mahi over wild rice and charred rounds of sweet bell peppers.
  • You could also cut your grilled fillets into large chunks for Baha-style tacos – yum!
  • To make this recipe more kiddo-friendly, use the juice of one fresh orange in place of tequila.
