Artichoke & Spinach Mac & Cheese

My kids love it! Ask me to make this at least once a week. Easy and Delicious and enjoyable for adults to!

Easy and quick, excellent meal for during the week when you get home late from work and need to make something! I used a 16 oz box of Rotini noodles because that is what I had in my pantry. I also added a few bread crumbs to the top when I broiled it so that there was a little more of a crust. I will definitely be making this again!

This is a yummy spin on Mac and cheese. Super easy and quick. I made ahead of time and put in fridge until dinner, then just heated in oven for 20 mins or so to Warm up. I did not broil to crisp cheese on top since I warmed in oven. Just enough of a different taste For the adults but same yummy Mac and cheesy goodness for the kids!

I was looking for a quick, last-minute side dish and decided to give this a try. It was awesome! The kids absolutely loved it. I do think that the next time I make it I'm going to use half and half as a substitute for the cream cheese and milk, which will make it even easier since there will be less ingredients!
