Artichoke and Spinach Breakfast Casserole Recipe

  • 12 eggs
  • 2 cups chopped ham or browned, ground sausage
  • 1 (28 ounce) package frozen O'Brien diced potatoes
  • 2 cups shredded Cheddar cheese, divided
  • Salt and pepper to taste

Whisk sauce mix and eggs in a large bowl; stir in meat. Pour ¾ pkg. frozen potatoes into a large greased slow cooker; top with 1½ cups cheese, followed by ¾ of egg mixture. Layer with remaining potatoes and eggs. Cover; cook on low for 5-6 hours. Top with remaining cheese during the last 5 minutes of cooking. Makes 6 servings.
