Cheesy Pizza Meatloaf Recipe

  • 2 lbs. ground beef
  • 1 large egg
  • ½ cup toasted plain bread crumbs
  • 1½ Tbsp. Pizzeria Seasoning , divided
  • 8 oz. can tomato sauce, divided
  • 2 cups shredded mozzarella cheese, divided

Preheat oven to 350°. Combine first 4 ingredients in a large bowl. Combine 1 tsp. Pizzeria Seasoning and half a can of tomato sauce in a small bowl. Set aside. Add the remaining seasoning and sauce to the meat mixture; stir well. On waxed paper, pat the mixture into a ½-inch thick rectangle. Sprinkle with 1½ cups cheese and roll up tightly, starting on the short end. Place in a greased 9 x 13 baking pan. Top with set-aside tomato sauce mixture. Bake 55-60 minutes. Top with remaining cheese and continue baking until cheese is melted. Remove from oven and let rest 5 minutes before slicing. Serve with cheesy garlic toast and steamed vegetables. Makes 6 servings. 

Make Ahead and Freeze
Follow directions above. After rolling up meatloaf, wrap tightly in plastic wrap. Place remaining cheese in a quart resealable freezer bag. Place remaining sauce in a quart resealable freezer bag. Wrap all items tightly in 2 sheets of aluminum foil. Label and freeze. Thaw and prepare as directed above.
