Remove top and seeds from pepper. Cut large olive in half and place on each side of the pepper to form the "ears." Secure with a toothpick half. Cut the ends of the string cheese pieces to form the "whites" of the "eyes." Cut the small olive in half for the "pupils." Place the whites and pupils on the pepper "face." Secure with a toothpick half. Cut the remaining cheese in a zigzag shape to form a "mouth." Place under the eyes. Secure with a toothpick half.
Fill pepper with Corn, Black Bean Salsa immediately before serving. Serve with tortilla chips. Makes 12 servings.
