This soup is really easy and delicious. Tastes just like a Reuben sandwich, so if you enjoy those flavors, you'll like this soup. I could not find shredded Swiss, so I used mozzarella, and it was totally fine. I didn't even use all of the cheese, 2 cups seemed like a lot.
