Ham, Swiss & Artichoke Frittata Recipe

  • 1/2 cup sour cream
  • 1 (14.5 ounce) can artichoke hearts, drained and chopped
  • 1 1/2 cups (about 12 ounces) diced ham
  • 1 1/2 cups shredded Swiss cheese, divided
  • Dash salt and pepper

Serve it tonight: Preheat oven to 350°. Whisk first 5 ingredients and 1 cup of Swiss cheese together in a large bowl. Season lightly with salt and pepper. Pour mixture into a greased 8 x 8 baking pan. Bake 45 minutes or until set. Remove from the oven, sprinkle with remaining ½ cup of cheese. Bake an additional 5-7 minutes or until cheese melts. Let stand 5 minutes. Makes 6 servings. Serve it later: Whisk first 5 ingredients and 1 cup of Swiss cheese together in a large bowl. Season lightly with salt and pepper. Pour mixture into a resealable plastic bag; freeze. To serve, thaw completely; pour into a greased 8 x 8 baking pan. Bake as directed above. Suggested sides: Fresh fruit or fruit salad and hot buttered toast.
