Preheat oven to 400°. Place potato slices in a bowl of ice water for 5 minutes to remove some of the excess starch; drain and pat dry with paper towel. Combine ingredients in large bow; stir to coat. Place on 2 foil-lined baking sheets in a single layer. Bake 25-30 minutes or until potato edges are golden brown. Sprinkle with a little more seasoning, if desired.
Tip: for easy preparation, combine ingredients in a gallon resealable plastic bag; shake to coat.
