Pistachio Chicken Salad Recipe

  • 1 cup chopped fresh baby spinach leaves
  • ½ cup prepared chopped or shredded Make & Freeze Chicken, thawed, if frozen (recipe link in directions)
  • ¼ cup halved red seedless grapes
  • 1 green onion, sliced
  • 2 tablespoons chopped celery
  • 1½ tablespoons paleo-friendly mayonnaise
  • ½ teaspoon paleo-friendly Dijon mustard
  • 1 tablespoon shelled pistachios or walnuts


Note: This recipe uses Make & Freeze Chicken.

  1. In small bowl, combine first 8 ingredients. Toss to combine.
  2. Stir in pistachios.

Makes 1 serving.

Make Ahead: Prepare step 1 up to 1 day. Refrigerate, covered. Stir in pistachios just before serving.

So much flavor, packed with protein, and super filling! I love chicken salad, and this is a fabulous healthy version and no need for bread! I didn't even miss the bread with it. I'll make this again and again.
