Pumpkin Cheesecake Bars Recipe

  • 2 (8 ounce) packages cream cheese, softened
  • ½ cup sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 cup + 1 tablespoon water, divided
  • 7 tablespoons butter, melted, divided
  • 1 cup chopped pecans

  1. Preheat oven to 350°F. Spray a 9x9 pan with baking spray or grease and dust with flour.
  2. In a medium bowl, cream together cream cheese, egg, vanilla and sugar until smooth.
  3. Prepare Pumpkin Bread & Maple Glaze Mix packet 1 according to package directions using 1 cup water and 6 tablespoons melted butter. Pour ¾ of batter into prepared baking pan.
  4. Carefully dollop cream cheese mixture by spoonfuls onto batter in pan; drop remaining pumpkin bread batter by spoonfuls on top of cream cheese mixture. Sprinkle with chopped pecans.
  5. Bake 45-50 minutes or until the top springs back when touched; cool completely. Mix Pumpkin Bread & Maple Glaze Mix packet 2 with 1 tablespoon water and 1 tablespoon melted butter; drizzle over cooled bars.
