    My lunch for the week!

    I varied this a bit and didn't prepare them in the shell. Instead, I sautéed the veggies, cooked the quinoa, mixed all ingredients together and put it in single serving containers. For lunch I'm just bringing a container and tortilla shell! Super easy .. super delicious!

    Loved these!

    I have to admit...I was very hesitant in trying these because I've never had quinoa before, but these were AMAZING. My daughter who is 4 ate a whole burrito herself! I skipped the Chipotle Seasoning and I thought they were perfect, but my husband was looking for that extra zip. Next time I make these I will split it into two batches one for me and my daughter and one for my husband with the Chipotle Seasoning.

    Another quick and easy meal

    This one was super quick to put together and was ready to serve in just under 30 minutes. Very delicious and nutritious.

    Shockingly good and good for you burritos!

    I admit, I was skeptical about this one. No meat and way too much healthy stuff to be good right? Wrong! Man these were delicious. My kids ate them up and said they were the best burritos ever. The spread with the hummus and chipolte seasoning had amazing flavor.

    Wonderful!

    We made these as Breakfast Burritos for a camping trip. We added scrambled egg, subbed Swiss Chard from our garden for the spinach and used 1/2 a packet of the hummus mix instead of a full one, because I used about 1/2 the quinoa called for. Here's why...I cooked the quinoa this time with 1/2 tsp Seasoned Salt, 1/4 tsp Garlic Pepper Seasoning and 2 tsp Onion Onion. Plus a tbsp of butter. Oh. My. Stars. It was the BEST quinoa I have ever made...I ate a bunch of it before I made the burritos...#noselfcontrol. ;-)

    Quinoa Bean Burrito

    This was easy to make, has a good flavor and made a very filling meal. The best part is knowing I've got 9 more meals of it waiting in the freezer.

    Filling is very versatile!

    When we made these burritos for the first time, we did so as instructed. We loved the filling so much we decided to make it by itself and top with Parmesan cheese and another time to make and stuff in red peppers/bake. The flavor is abundant without being "too much". This recipe is one of our favorites for Meatless Mondays! Definitely recommend!

    PACKED with flavor!

    These burritos are DELICIOUS! I love that I can make up a batch, freeze individually, and have several lunches and/or dinners taken care of! I reheat them in the microwave or oven.

    Quinoa Bean Burrito

    Absolutely love!! After working all day and not having an idea what to cook for dinner this was the perfect solution. Just pulled from freezer to thaw, did some household chores, read the mail and back to find burritos ready to be cooked and a preheated oven. Took about 20 minutes and dinner was done!! The robust flavor with a touch of heat was a surprise. Will definitely make again!!
