What a great recipe! I used the full 3 tsp of simply salsa but will use a bit more next time. I also added a little garlic, garlic to the eggs/almond milk mixture for extra flavor. It was delish... even reheated from frozen!

We had these during the 14 Day Reset, and both my husband and I really liked them! It was a great way to meal prep breakfast for the week, which saved me time in the morning. I felt fuller after eating the egg cups instead of a bowl of cereal. I added sriracha to mine for extra kick!
