  1. In a 6-quart or larger slow cooker, combine first 7 ingredients. Cook on LOW 5-6 hours.
  2. Remove chicken and shred. Stir back in with cream cheese, half & half, zucchini and Cheddar cheese. Continue cooking on LOW 20-30 minutes.
  3. Serve garnished with cilantro, if desired.

Makes 6 servings.

Serve with a green salad.
