I tried to make it according to the recipe, but realized I didn’t have some of the ingredients, so I substituted spinach for arugula and Feta cheese for goat cheese. I also didn’t have any fruit seasoning. The orzo recipe called for chicken broth and water, but because this is a cold dish with fruit, I boiled the orzo in the mandarin orange juice and water. When all the ingredients had been mixed, I topped it off with orange poppy seed dressing. It was delicious!

We loved this with the grilled citrus chicken, and had some leftovers for lunch on following days. Really quick and easy to make, and tastes very fresh.
