Turkey Burritos Recipe

ingredients

  • 20 oz. lean ground turkey
  • 15 oz. can pinto beans, drained
  • 14.5 oz. can diced tomatoes with juice
  • 8 oz. can tomato sauce
  • 2 cups cooked white rice
  • 1 (8-count) pkg. 10-inch flour tortillas
  • 2 cups shredded Cheddar cheese

Serve it tonight: In a large saucepan, brown turkey; drain. Stir in remaining ingredients except tortillas and cheese. Heat to boiling, stirring frequently (add 1 Tbsp. water if mixture seems dry). To assemble burritos, place about a cup of turkey mixture down center of each tortilla; sprinkle with ¼ cup cheese. Fold in sides; roll up tightly to form burritos and repeat. Makes 8 servings. Serve it later: Prepare as directed above. Wrap each burrito in plastic wrap; place in single layer on a baking sheet. Freeze at least 4 hours; transfer frozen burritos to a large resealable freezer bag. To reheat in microwave, remove plastic wrap; place one frozen burrito on a microwave-safe plate. Microwave on high 4-6 minutes, turning halfway through. Let stand 2 minutes before serving. To reheat in oven, remove plastic wrap and rewrap each frozen burrito in aluminum foil. Place burritos 2 inches apart on oven rack. Bake at 400° for 50-60 minutes or until heated through. Suggested sides: Steamed corn and apple wedges
