Beef Stir-Fry over Cauliflower Rice Recipe

  • ¼ cup coconut aminos
  • 2 tablespoons toasted sesame oil
  • 1 tablespoon arrowroot powder
  • 1½ pounds beef flank steak, thinly sliced
  • 2 tablespoons coconut oil, divided
  • 1 (16 ounce) package frozen broccoli florets
  • 1 (5 ounce) package sliced fresh shiitake mushrooms
  • ¾ cup shredded carrots
  • 1 red bell pepper, chopped
  • 1 tablespoon fish sauce (such as Red Boat) or beef broth
  • ¼ teaspoon red chili flakes, optional
  • 2 (10 ounce) packages frozen riced cauliflower, prepared as directed

  1. In medium bowl, whisk together first 4 ingredients. Set ¼ cup aside. Add beef to remaining sauce in bowl. Toss to coat well.
  2. Heat a large skillet over medium-high heat. Add 1 tablespoon coconut oil to hot skillet. When oil shimmers, add beef; stir-fry until cooked through, about 3-4 minutes. Remove from skillet; set aside.
  3. Add remaining 1 tablespoon coconut oil to skillet. Add broccoli, mushrooms, carrots and bell pepper. Stir-fry until crisp-tender, about 3-4 minutes.
  4. Stir in beef, reserved sauce, fish sauce and chili flakes, if desired. Stir-fry 3-4 minutes. Serve over prepared riced cauliflower.
