Berry Layered Cheesecake Recipe
This luscious lemony berry cheesecake is easy to prepare but looks like you spent all day!
- 2 (8 oz.) pkgs. softened cream cheese
- 2 eggs
- 5 drops red food coloring
- 1 prepared graham cracker pie crust
- 8 oz. non-dairy whipped topping, thawed
- Fresh strawberries and blueberries
Preheat oven to 350°. Beat first 2 ingredients; blend in eggs. Remove 1 cup of mixture; add fruit spread or jam and coloring, stir until well blended. Pour into crust; cover with the remaining mixture. Bake 35-38 minutes or until center is almost set. Cool. Refrigerate 3 hours or overnight. Just before serving, top with whipped topping and berries. Makes about 8 servings.
Rated 5 out of 5 by DeAnna P from so easy! This was very easy to make and turned out wonderfully! I like my desserts a little tart and my husband doesn't like strawberries, so I used blueberry jam and put lemon zest on it instead of whipped topping. It is delicious!
