Corn, Black Bean Stuffed Peppers

This is my "go to" recipe when bell peppers are in season or on special. I use ground chicken in place of the beef sometimes and add some chopped onion, jalapeno and cilantro for a little extra flavor if I have those ingredients on hand. Just personal preference - the recipe is delicious as written. If you have leftover filling, it's a great warm dip for tortilla chips.

I've been making stuffed peppers for years and these are the BEST I've ever had. The flavors in the corn and black bean salsa really nailed it for the peppers. I'm permanently swapping this recipe for my old one!
