Loved this! I did it as a freezer meal, but only the chicken filling. I assembled it the night I baked it- turned out amazing. Definitely adding this to my cook it again file!
I just printed this recipe for dinner later this week. I'll update my review once I try it, but I'm sure it is as wonderful as all your recipes! Question...where do I find the nutrition info? I'm curious as to the fat and sugar content, plus I now pay much more attention to the info. Thanks very much!!
Made this and the whole family enjoyed it! My picky son did take out the corn and black beans from his serving, but he ate the rest. I just cooked up chicken tenderloins and shred them as the cooked, added in the other ingredients and layered it up! Was definitely filling so we have a second dinner out of it and maybe even a lunch for one of us (Family of 3).
Settles my Mexican craving abd super easy and absolutely delicious! The kids helped make it and what a hit in our home! My only suggestion is if your kids are big on spices cut Feista Party Mix in half.
Love that it's GF without any modifications! I shred rotisserie chicken and use 1/2 for one recipe and freeze 1/2 for other time, or make 2nd one to have in freezer for when I'm gone for dinner. Easy peasy for family to make and enjoy!

Simple & delicious! The prep really is only about 15 minutes. I used mild enchilada sauce and the heat was just right! Will definitely make again!
