I've made this twice now; used thighs both times. The first time I cooked the chicken in a cast iron skillet, and the second time I grilled the meat. Neither time we used cheese, and once we didn't have avocados but that didn't stop these sandwiches from being completely amazing! The sauce and the jalapenos make these POP with flavor. Definitely a hit with the family!

Brought this to the table one night and had everyone assemble what they wanted on their sandwich bread. The hubby thought it tasted like something you'd get at a farm to table restaurant!! Win!
