Combine first 3 ingredients; let stand 30 minutes. Place chicken in a large resealable plastic bag; add half of Simply Salsa mixture. Place vegetables in a separate resealable plastic bag; add remaining Simply Salsa mixture. Refrigerate both plastic bags and let marinate for up to 3 hours. Grill chicken until cooked through, about 7 minutes per side. Grill vegetables in a grill pan until tender, turning frequently. Slice chicken crosswise into strips. Fill tortillas with chicken and vegetables; top with preared Fiesta Party Dip. Makes 6-8 servings.
