Taco Tots Recipe
Taco filling served over tater tots instead of in a tortilla. Your family will love it!
- 1 (32 ounce) package frozen tater tots
- 1½ pounds lean ground beef
- 2 teaspoons chili powder
- 1 (8 ounce) package shredded lettuce
- 1 (3.8 ounce) can sliced black olives, drained
- 2 cups shredded Cheddar cheese
- Taco sauce, sour cream, optional
- Prepare tater tots according to package directions.
- Meanwhile, in large skillet over medium-high heat, cook and crumble beef and next 3 ingredients until no longer pink, about 6-8 minutes. Drain off liquid.
- Divide tater tots among 6 dinner plates. Top with beef mixture and remaining ingredients.
Wine Pairing: Spanish Rioja.
Make Ahead & Freeze: Combine ground beef and next 3 ingredients in a gallon freezer bag. Seal well, label and freeze with tater tots. Thaw completely and continue with step 1.

YUM Seriously I wanted (but didn't eat) 2nds and 3rds and can't wait to have it for lunch leftovers! I get fussy about Mexican food but I could eat this regularly!
