Christmas Morning Slow Cooker Egg Bake

I made this for our family Christmas since we had several staying the night with us. There was nothing special abut this at all. We all ate it, no one thought it was gross, but no one went for seconds and no one wanted the leftovers -- we threw away half of it. There's just nothing special about it. It tasted bland and was mushy. Very disappointed.

We all loved it and I am not a huge fan of egg casserole. Used frozen mini tater-tots, instead of diced potatoes--worked wonderfully. Used all sausage, hmmmmmmm. We did the oven method and it worked great. Thanks for another great recipe, Jane!

I wanted to make this in the slow cooker overnight but time got away from me so I figured I'd just do it in the oven per the directions and it would be ready in an hour. No way. Not even nearly done, and I have a great oven with very accurate temps. It probably went an extra 35-45 minutes past the recommended 55 minutes. In the end, it was excellent an everyone loved it. Great flavor. We did ham & bacon. I'd definitely make it again but next time either in the crock pot overnight or I'll get started earlier so I don't have a houseful of starving people waiting on breakfast!

Who would have thought I could have breakfast ready when I wake up! This was perfect Christmas morning, instead of slaving in the kitchen - I actually got to enjoy in the festivities! ps - this makes a GREAT little "Appreciation Breakfast" for your team and you don't have to get up before the chickens!
