This is a leftover recipe for Tex-Mex Beans & Rice and Classic Beef Enchiladas.

  1. Place rice and beef in 2 separate microwave-safe bowls. Microwave rice on HIGH 1-2 minutes or until heated through. Microwave beef on HIGH 1-1½ minutes or until heated through.
  2. Divide rice and beef between 2 dinner bowls. Top with desired toppings.

Makes 2 servings.

Work Lunch Suggestion: Place rice in 2 large microwave-safe storage containers. Place beef in 2 microwave-safe storage containers. Refrigerate up to 1 day. Continue with step 1, adding beef and toppings to bowls with rice.
