  • Stir 1 tablespoon poppy seeds into batter before baking.
  • After drizzling cake with icing, sprinkle with sweetened, flaked coconut.
  • For mini trifles, cut cake into cubes. In small glass dishes or wine glasses, layer cake cubes with whipped cream and fresh berries. Dust with contents of icing packet.

Sunny Lemon Pound Cake & Icing Mix

1 package Sunny Lemon Pound Cake & Icing Mix
¾ cup + 1 tablespoon water, divided
½ cup + 2 tablespoons butter, melted & cooled, divided
1 large egg, beaten

1. Preheat oven to 325°F. In large bowl, combine Packet 1, ¾ cup water and ½ cup melted butter and egg; blend well. Do not overmix; batter will be lumpy.

2. Spread batter into greased 9x5-inch loaf pan. Bake 55-60 minutes or until toothpick inserted in the center comes out clean. Cool completely. Remove from pan.

3. In small bowl, combine Packet 2 with remaining 2 tablespoons melted butter and 1 tablespoon water; whisk until smooth. Drizzle over top and sides of pound cake. Makes about 11 servings.

High Altitude: Increase water in cake by 2 tablespoons and add 1/3 cup flour. Bake at 325˚F for 55 minutes or until toothpick inserted in center comes out clean.

Use ½ cup plain Greek yogurt in place of butter in cake. To prepare icing, combine Packet 2 with 1 tablespoon water.

Do not eat raw batter.

    Moist, no problem

    I’ve always found this cake to be moist. No issue and it has a pleasant lemon flavor. Especially the frosting - be sure to use!

    Lemon pound cake

    Was excited to have a piece of a tasty lemon pound cake, but I was very disappointed once i had a piece. It was NOT lemony, not moist, and not tasty. It was very bland, dry, and disappointing.

    Baked my cake today was a little disappointed this time cause I love this cake but it seemed dry and not as lemon as I remember! I've made this many times before it just wasn't the same even my husband said it was dry and not that good lemon taste! Sorry cause I really like tastefully simple products

    Sunny Lemon Pound Cake & Icing.

    This was a gift to me. Decided to make this over the weekend. Quick and easy. I was a little disappointed in the cake. It seemed to have a strange taste to it. Thought it was going to be more of a pound flavor. The frosting was delicious. Liked it. Hubby enjoyed it and I ate mine. Will finish the cake, but probably won't order it. Not sure what the taste was like, but an odd taste. Love your products and have never been dissatisfied with anything. Love your Almond pound cake and Nanna's apple cake. My favorite.

    Tastes like summer!

    This is one of my favorite cakes! I love how moist it is and the fresh lemon flavor reminds me of summer...even in the midst of the long winters in Michigan!

    Lemon pound cake

    I baked this per directions. What a mess. Directions say do not grease pan. WRONG. Cake stuck to pan. All this just before company came. Never again would I go by their direction. Waste of alot of butter

    no lemon taste

    I was totally disappointed in the lemon pound cake. There was no lemon flavor. Save your money. Go to the grocery store and buy a lemon cake mix at 1/4 of the price if you want it to taste like lemon

    So delicious

    A friend brought this as one of her dishes to pass to our ladies Friday night group Gathering and she made it with fresh blueberries on top and it was just so delicious!!
