ingredients

  • 12 oz. lemon lime soda or ginger ale
  • 1 Tbsp. cinnamon
  • 2 Tbsp. melted butter
  • 2 cups powdered sugar
  • 1 Tbsp. cinnamon
  • 2 Tbsp. water or orange juice

cooking methods

  • Bake

directions

Preheat oven to 375°. Quickly and firmly stir the first 3 ingredients together in a mixing bowl for 20-30 seconds. Do not over mix; the batter will be lumpy. Spread batter into a greased 9 x 5 inch loaf pan. Pour melted butter over the top of the batter. Bake 50-55 minutes until loaf is golden brown and pulls away from the sides of the pan. For the glaze, blend powdered sugar and cinnamon in a bowl. Add water or orange juice 1 tablespoon at a time until desired consistency is reached. While the bread is still warm and in the pan, score the top of the bread crosswise and lengthwise several times with a sharp knife, cutting about 1 inch deep. Remove the loaf from the pan and place it on a large serving plate. Pour the glaze over the top while the bread is still warm; let stand about 15 minutes before slicing and serving. Makes about 14 servings.

Rated 4 out of 5 by from Easy & Yummy This bread was super easy to make and tasty for all. I also had trouble with the icing. It was too dry and not white. I added water until I could pour it.

Rated 4 out of 5 by from Yummy bread We thought the bread was quite yummy when warm. The icing didn't turn out but we liked the bread even without the icing.

Rated 2 out of 5 by from Glaze portion of recipe doesn't seem correct The bread is tasty, but the glaze ingredients seem incorrect. I mixed 2 c powdered sugar with 1 tbsp of cinnamon and 2 tbsp orange juice and it was very, very dry. I added a lot more liquid to make it an actual glaze as well as some vanilla to cut the intense cinnamon flavor. The picture shows a white glaze, but if you follow the instructions then the glaze will be brown from all of the cinnamon.
