Stuffed Turkey Medallions Recipe

  1. Cut each tenderloin in half. Cut each half in half horizontally. Pound each piece ¼-inch thick; season with salt and pepper.
  2. Fill each tenderloin with about ½ cup Creamy Wild Rice Stuffing. Fold sides up and tie with a piece of kitchen string.
  3. Preheat oven to 400°F. Place turkey medallions in 2 foil-lined and greased large rimmed baking sheets. Brush with Roasted Garlic Infused Oil and sprinkle with Rustic Herb Seasoning.
  4. Bake 17-20 minutes or until internal temperature of turkey reaches 165°F on an instant-read food thermometer. Let stand 5 minutes before serving.

Makes 12 (2 medallion) servings.

Make ahead: Prepare through step 2. Refrigerate in an airtight container up to 1 day ahead. Continue with step 3.

We all agreed the full recipe was delicious and the stuffing is incredible on its own. I served with gravy, which did add to the Thanksgiving experience. Will be making again for sure!
